I'm a massive fan of buffalo chicken sandwiches, but this time around I put a lebanese twist on things, by changing the buffalo sauce and the sandwich fillers. This is my take on a Lebanese Buffalo Chicken sandwich.

"Batata Hara" Sauce - I would recommend doubling the sauce for extra sauciness
30g butter to fry
10 cloves garlic
2-3 Red Chilli
4 Tbsp Lemon Juice
2 Tsp Smoked paprika
1 Tsp Salt
1 Tsp Pepper
1 Tbsp white vinegar
150g unsalted butter to emulsify
Small bunch of Coriander
Pinch of cornstarch

Toum - Garlic sauce:
2 Garlic Cloves
30g Corn starch
125ml Milk (Can be substituted with water)
125ml Milk (Can be substituted with water)
60ml Vegetable Oil
3/4 Tsp Salt
3/4 Tsp Citric Acid

Lebanese Cabbage salad:
1/2 green cabbage
2-4 green onions
3/4 tsp salt
2 tbsp mint chopped
1/2 tbsp dill chopped
4 Tbsp olive oil
3 tbsp lemon juice

Chicken coating:
350g all purpose flour
1 1/2 tsp salt
1 tsp black pepper
1/2 tsp white pepper
1 tsp cayenne pepper
2 tsp paprika
1 tsp sumac
1 Tsp garlic powder
600g - 8 count boneless chicken thighs
350g Buttermilk
1l Oil for frying
8 Buns
