Focaccia is a representative Italian bread that can easily make with ingredients around it like pizza. It is fragrant focaccia with a fresh olive scent, tomato, and rosemary. Here's a recipe that even beginners can easily follow by folding without kneading. Then just by folding the dough, you can make perfect focaccia.

In this video, we also prepared a summer salad with seasonal vegetables and fruits. Have a fantastic brunch with Mediterranean-style salad, freshly baked focaccia, and white wine! I will start making traditional Italian focaccia with tips that can be successful at once. 🙂

[ T65 Flour ]
I used French T65 flour, which is usually using to make baguettes. The crust is thinner than the all-purpose flour, and the inside becomes moister with more pores. You can make the best focaccia, which is very crispy and chewy inside.

🍅 INGREDIENTS 🍅

[ Pan Size: 34 × 24 cm ]

[ DOUGH ]
All-purpose flour (T65 Used) 400g
Salt 4g(1 tsp)
Dry yeast (for lean dough) 3g (1 tsp)
Water (30-35°C) 320 ml
Olive oil 10 ml

A little olive oil (during folding)

15 Cherry tomatoes
A little rosemary

[ DOUGH COATING ]
Water 30ml
Olive oil 30ml
Salt 2g (1/2 tsp)

🍅 PROCESS 🍅

** Simply folding makes the perfect focaccia. (No-kneading) **
** When you do the third folding, the dough swells well, and pores form well, making it moister and delicious. **

01. Put the all-purpose flour, salt, and dry yeast in a bowl and mix them evenly with a fork.
02. Add water and olive oil and mix with a fork until it forms a lump.
03. ◀ 1st. Fermentation ▶ First fermentation at room temperature(25-27°C) for 60 minutes after wrapping (until it swells more than twice as much).

04. ◆ 1st. Folding ◆ Put olive oil around the edges of the dough, stretch and fold the sides one by one, turn them upside down, make them in a round shape.
05. After wrapping, take a rest for 30 minutes.
06. ◆ 2nd. Folding ◆ Stretch and fold the sides one by one, turn them upside down, make them in a round shape as before.
07. Take a rest for 30 minutes after wrapping.
08. ◆ 3rd. Folding ◆ Stretch and fold each side once, flip it over, move it to the pan, and gently stretch the dough.
09. After wrapping, take a rest for 30 minutes.

10. ◀ 2nd. Fermentation ▶ Stretch the dough by tapping the top of the dough with your fingers. Then ferment for 60 minutes at room temperature (last).
11. Press the dough with your fingers where you want to put the cherry tomatoes.
12. Brush olive oil, water, and salt mixture on top of the dough, and top with tomatoes and rosemary.
13. Bake at 220°C for 20 minutes. (260°C Preheating (Maximum Temperature Preheating) / Based on Unox Oven)
** The dough swells well in the oven only when baked at high temperature. **
14. Take it out of the pan and cool it down on a cooling rack.
15. Brush the remaining olive oil mixture onto the top (for gloss and flavor).

바게트를 만들때 주로 사용하는 프렌치 T65 밀가루를 사용했습니다. 국내 중력분보다 크러스트가 더 얇고 기공이 많이 생기면서 내상이 더 촉촉해집니다. 크러스트는 아주 바삭하고 속은 쫄깃한 최상의 포카치아를 만들 수 있어요.
