Here's how I make green bean casserole, my favourite of all the thanksgiving dishes! Inspired by Alton Brown and Andrew Rea with a lil British and Evan twang.

The Green Bean Casserole Recipe:

Ingredients

*French fried onions:*

- *2 -3 large onions*
- *1 cup or 250ML buttermilk*
- *1 cup all purpose flour (as needed to coat onions) 120g*
- 1/2 cup or more *Vegetable oil (enough to fry onions in a cast iron)*
- *Kosher salt*
- *MSG*

*Cream of mushroom soup:*

- *8 ounces baby portobello mushrooms (diced) (250g)*
- *3 Tbsp butter (40g)*
- *1 heaping Tbsp flour*
- *3 cloves crushed garlic*
- *1 Tbsp brandy (to deglaze the pan)*
- *1 ½ cups chicken stock 375 ML*
- *1 cup heavy cream 250ML*
- *Dash of Henderson’s relish*
- *Dash of soy sauce*
- *Juice of 1/2 lemon*

*Green beans:*

- *500g fresh trimmed green beans*

Steps *For Green Bean Casserole*

**French Fried Onions**

1. *Start by cutting 2-3 large onions in half and slicing them finely*
2. *Place in a bowl and add 1 cup of buttermilk, covering the onions.*
3. *Let sit for 15 minutes. Drain onions and toss them in all purpose flour to coat.*
4. *Once they’re nicely coated, use a sieve to shake off the extra flour.*
5. *Heat up canola oil in a cast iron skillet to 150°C.*
6. *Add onions and cook for 7-9 minutes or until golden brown and crispy.*
7. *Remove and place on a plate lined with paper towels.*
8. *Season with salt and MSG. Set aside.*

**Cream of Mushroom Soup**

1. *Put the kettle on*
2. *Dice up 8 ounces of baby portobello mushrooms.*
3. *In a high lipped stainless steel pan, add 40g of butter along with your diced mushrooms and a pinch of salt.*
4. *Once the moisture has evaporated out of the mushrooms, add 1 heaping Tbsp of flour.*

*Mix to combine for 1 minute.*

1. *Add 3 cloves of crushed garlic and cook for about 30 seconds before adding 1 Tbsp of brandy to deglaze.*
2. *Once all the alcohol has cooked out, add 1 ½ cups of stock and 1 cup of double cream.*
3. *Mix to combine and bring to a simmer before adding a dash of soy sauce and henderson’s relish.*
4. *Cook until darker brown and thick.*
5. *Finish with the juice of half a lemon*

**Green Beans**

1. *Cut the stems off your green beans and then slice into 1 -2 inch pieces.*
2. *Par-boil for about 2 minutes until bright green and then add to an ice bath.*
3. *After mixing them around to cool, drain the water.*

**Casserole Assembly**

1. *Combine green beans, cream of mushroom soup and ½ of the french fried onions.*
2. *Stir to combine.*
3. *Butter a casserole dish and add mixture.*
4. *Cover and bake at 180°C for 15-20 minutes or until bubbling.*
5. *Remove from the oven, uncover, add the rest of the french fried onions and cook uncovered for an additional 5-10 minutes or until browned and bubbly.*
6. *Serve and enjoy!*
