In sourdough bread baking, kneading is largely replaced by fermenting the dough for a long time (no-knead bread). During the fermentation process, gluten strands form, which give the bread structure and tension.
You will find stretch & folds in all my bread recipes, and this video shows you how to do it.
If you have a high-hydration dough, you may have to do coil-folds, and I have a separate video for that.
