Soft, fragrant, and perfectly spiced — these Gingerbread Muffins are everything you want during the holiday season. They’re tender, moist, and so easy to make. A perfect cozy bake for December.

Ingredients:
2 cups (250 g) all-purpose flour
1 tsp baking soda
1/2 tsp baking powder
2 tsp ground ginger
1 1/2 tsp cinnamon
1/4 tsp clove
1/4 tsp nutmeg
1/2 cup (100 g) brown sugar (light or dark)
1/2 cup (120 ml) milk
1/3 cup (80 ml) vegetable oil
1/2 cup (120 ml) boiling water
1 large egg
1/3 cup (120 g) molasses
1 tsp vanilla extract
Pinch of salt

Baking:
Bake at 220°C / 425°F for 6 minutes, then reduce to 180°C / 350°F and bake another 10–12 minutes.
Makes about 11–12 muffins.
