I had a great time at T&S Ranch with my good friends Sandra and Tony Garza of the Iron Horse Cooking Team. They opened their doors for us to film a great recap with some of the best in the game.

Pan de Campo, or "Cowboy Bread" is a classic Texas recipe that everyone can enjoy. All you need is a solid recipe and a dutch heated over mesquite coals. Below is our family recipie – what is yours? Don't have one yet? There are a ton of other recipes online, this just happens to be our family recipe. Do a quick search online and see what you come up with. A safe bet is always the King Ranch version, used by many a pan de campo cook.

PAN DE CAMPO (Smokin' Lonestar family recipe)
(Cowboy Camp Bread)
8 Cups Flour
8 TSP Baking Powder
4 TSP Salt
4 TSP Sugar
1 1/2 Cups of Oil
3 Cups Milk

Makes 4 12" Breads

Instructions: Mix all dry ingredients in large mixing bowl, add oil and mix well. Add milk and knead well until all flour is dissolved. Use a rolling pin to spread 4 12" breads. For an old fashioned, outdoor taste, bake in a butch oven for 5-10 minutes or until evenly browned.
