Ingredients:
1 whole chicken (cut into pieces)
2 teaspoons chopped ginger
2 teaspoons chopped garlic
1 teaspoon chicken bouillon powder
4-5 teaspoons brown sugar
Salt & white pepper to taste
1 tablespoon oyster sauce
1 tablespoon sesame oil
1 tablespoon Chinese rice wine (or brandy)
1 egg
3 tablespoons cornstarch
½ cup water
½ cup white vinegar
½ cup sugar
½ cup tomato sauce
1 tablespoon cornstarch (for sauce thickening)
Bell peppers (red, yellow, green)
1 small red onion
1-2 fresh chilies (optional, for spice)
Instructions:
Prepare the Chicken: Clean and cut the chicken into pieces. Marinate with ginger, garlic, salt, white pepper, chicken bouillon, brown sugar, sesame oil, rice wine, and egg. Add cornstarch and mix well. Let it marinate for 30 minutes (or up to 2 hours for more flavor).
Make the Sauce: Mix water, vinegar, sugar, tomato sauce, and salt in a pot. Stir until sugar dissolves and bring to a boil. Make a cornstarch-water mix to thicken. Stir in the cornstarch slowly and keep stirring.
Fry the Chicken: Coat marinated chicken pieces in flour and cornstarch, then fry in preheated oil until crispy and golden. For extra crispiness, double-fry at a higher temperature.
Prepare the Veggies: Stir-fry bell peppers, onions, and fresh chilies (if using) in olive oil.
Combine and Serve: Toss the fried chicken into the sweet and sour sauce with the veggies. Stir-fry until coated and dry, then serve hot.
