With a culinary legacy that spans 130 years and four generations, Rahamaniya Briyani Hotel is considered to be the home of the Ambur Briyani. Spelt Briyani by the denizens of this bustling town, this dish has spawned many a biryani shop across the region.
In this episode of Gourmet On The Road, Food Lovers’ Editor, Kripal Amanna meets three generations of the Ahmed family and gets exclusive insider access to the kitchens of Rahamania Briyani Hotel to watch the making of an Ambur mutton briyani from scratch.
He also tastes the briyani and a moist Naatu Kozhi briyani in addtion to a couple of meaty sides.

MUTTON BRIYANI
this biryani is seductively subtle in its aroma. you taste the luscious flavours of the aqhni in every grain of the flavourful jeera samba rice. The juicy meat pieces are small, allowing you to savour its meaty goodness in almost every mouthful of the briyani. If you like your briyani a little spirited and slightly spicy, taste it with the eggplant salan. I personally love this 'briyani' just by itself.

NAATU KOZHI BRIYANI
prepared in the same fashion as the mutton version, the flavour of the rice is very similar to the mutton briyani sans the flavour of the fat in the latter. The flavourful country chicken has a bit of a bite, typical of its character. If you love your naatu kozhi, you will love this briyani too.

Marinated deep-fried leg of chicken, fried to the perfect crisp outside yet retains its juicy moistness within. relish it with the toasty, herbaceous flavours of the curry leaves that are fried alongside the chicken.

Encased in a robust masala that’s rich in its fenugreek flavour notes, the seer fish fry is a tasty distraction from the legendary briyani here. The savouriness of the curry leaves and the acidity of the lime definitely perks up the flavours of the fish.
