Once you try my recipe, I’m sure you won’t go back to making kheer on the stovetop again.
INGREDIENTS
-1/2 cup basmati rice, washed and rinsed
-4 cups whole milk or full-fat coconut milk
-½ cup sugar, adjust to taste
-½ teaspoon ground cardamom, adjust to taste
-Pinch of saffron
-Mango pulp 1/2 cup
-heavy cream 1 cup
-Crushed nuts (pistachios, almonds, or cashews) 1/4 cup
-Golden Raisins 1 tbsp
INSTRUCTIONS
1. Rinse and drain the rice and set aside.
2. Press the sauté button and add rice and butter to the pot, saute for 30 sec
3. Pour the milk into the pot then add sugar, stir.
4. Secure the lid, close the pressure valve, and cook for 20 minutes at Manual/high pressure or porridge mode.
5. Naturally, release pressure.
6. Add heavy whipping cream cardamom powder and saffron shredded coconut to the pot. Stir until well combined. add chopped nuts. The kheer will thicken as it cools. If you prefer a thicker pudding, press sauté and stir until desired consistency. (if you like your kheer runny) Add 1/2 cups of milk (depending on the consistency you like)
Serve this dessert hot, warm, cold, or at room temperature. Top with nuts and raisins prior to serving!!
TIPS ANS TRICKS
1. After pressing the sauté button, add water and wait until it is steaming before you rice and milk. "Heating up the water before adding rice milk will keep the milk from burning. "
2. I prefer using full-fat milk.
3. Use only white rice.
4.you can add rose water or kewra water in the end
5. For variations add cinnamon and nutmeg powder
Serving suggestion:-
When the weather is cold, prefer to serve warm kheer, but if it’s hot out, then serve it chilled.
