Aloo Chole Biryani Recipe – Perfect One-Pot Meal!

• 100g soaked Kabuli Chana (chickpeas)
• 2 large potatoes (boiled and cut into large cubes)
• 2 tbsp Biryani Masala
• 1 tsp salt (adjust as per taste)
• 3 tbsp curd (yogurt)
• 1 tsp garam masala
• 1 tsp red chili powder
• 1 tsp turmeric powder
• Fresh coriander leaves
• Mint leaves or 1 tsp mint powder
• 2 tbsp mustard oil
• 1 cup basmati rice (80% cooked)
• 1 tsp Kevra water
• ½ cup saffron milk (a few strands of saffron soaked in warm milk)

Step-by-Step Instructions:
1. Prepare the Berista:
Thinly slice 2 large onions and fry them until golden and crispy. This will be used as a garnish and for layering.
2. Make the Chole-Aloo Masala:
In a bowl, mix soaked Kabuli Chana, boiled potato cubes, biryani masala, salt, curd, garam masala, red chili powder, turmeric powder, coriander leaves, and mint leaves. Let this marinate for a few minutes.
3. Cook the Masala:
Heat 2 tbsp mustard oil in a pan and fry the Chole-Aloo mixture until aromatic. Remove half of this mix and set it aside.
4. Layer the Biryani:
• In a pot, start with a layer of the Chole-Aloo mix.
• Add a layer of 80% cooked basmati rice.
• Sprinkle crispy Berista and a few drops of Kevra water.
• Repeat the layers with the remaining Chole-Aloo mix and rice.
• Drizzle saffron milk on the top layer for a rich flavor and beautiful color.
5. Seal and Cook:
Cover the pot with a tight lid, or seal it with kneaded wheat dough around the edges to lock in the steam. Cook on low heat for 10 minutes to let the flavors meld together.
