German Kale Salad Recipe

300g kale leaves
1 apple
2 carrots
35g mixed seeds (pine nuts, pumpkin seeds, sunflower seeds)
35g Walnuts

For the massage and dressing

1 Lemon
3 tbsp olive oil
2-3 tbsp of syrup (like maple)
3 tbsp German mustard
Salt and pepper to taste


Method

Wash your kale and detach the leaves by sliding along the stem. Tear them to size, sprinkle with some olive oil and lemon and then massage for at least 3 minutes in order to make the leaves tender. Grate your carrots and add to the salad, along with the sliced apple, which can be sprinkled with lemon juice beforehand. Crush a handful of walnuts and add along with our seed mix to add some crunch and healthy fats to the dish. Then combine the remaining olive oil, lemon juice, and syrup of choice with mustard to form a silky smooth dressing. Adjust your mustard amount depending on how hot yours is! German mustard is fairly mild and acidic. Mix in a generous helping of pepper and add salt to taste. Combine with your salad and enjoy!
