In today’s video, I’ll teach you a few Finnish words related to food 🥄—and at the same time, I’ll share delicious mango cheesecake recipe I make few times ago! 🍰 Two birds with one stone, right?

Here's the cheesecake recipe in full:
Mango Cheesecake
Serves 10–12

Base:
75 g butter
150 g digestive biscuits

Line the base of a springform pan (18–22 cm) with baking paper.
Crush the biscuits and melt the butter. Combine the butter and biscuit crumbs, then press the mixture firmly into the bottom of the pan.
Place the crust in the fridge to set.

Filling:
4 dl cream
300 g cream cheese (like Philadelphia)
2 dl sugar
1 tsp vanilla sugar
1 tsp lime juice
a splash of water or juice
6 gelatin sheets

Soak gelatin in cold water (5 min).
Whip the cream until it forms a soft foam.
In a separate bowl, mix the cream cheese, sugars, and lime juice until smooth.
Melt the soaked gelatin sheets in a small amount of boiling water.
Slowly pour the melted gelatin mixture into the cream cheese mixture while constantly whisking.
Gently fold in the cream and the quickly pour the filling over the crust.
Shake and tap the pan on the table to help the filling settle and remove air bubbles.
Refrigerate the cake for a few hours or overnight.

Topping:
2 small jars (250 g) mango purée (e.g., Piltti or Bonne)
2 gelatin sheets
a splash of water or juice

Soak gelatin in cold water (5 min).
Heat water/juice and dissolve gelatin.
Slowly pour the gelatin mixture into the mango purée while stirring continously. Carefully pour the mango mixture over the cake and place it in the fridge to set for a few hours.
