For Greek lemon chicken marinade
• 2 chicken breasts sliced, makes 4 pieces
• Salt to taste
• 1/2 tsp pepper
• 1/2 tsp paprika (optional)(add as per taste)
• 1/2 tsp oregano
• 1/2 tsp thyme
• Juice of 1/2 lemon
• 1/2 tsp oil
• 1/2 tsp minced garlic cloves

For lemon rice with chicken
• 3 tsp oil
• 1 onion, finely chopped
• 1 tsp minced garlic
• 2 and 1/4 cups chicken broth
• 1 tbsp lemon juice
• Salt to taste
• 1/2 tsp crushed black pepper
• 1/2 tsp thyme
• 1 tsp oregano
• 1 and 1/2 cups of long grain rice (rinsed and soaked in water for 30 minutes)
• Cilantro leaves (or parsley)
• lemon zest (optional)
