Making a batch of Tomato base Stew is a proven Time-Saving Cooking Hack that works! In my Kitchen, Tomato Base Stew comes handy when I'm preparing delicious African and International cuisines for my friends, for it allows me to quickly prepare tasty dishes such as: chicken stews, beef stew, fish stew, chicken soup, pasta, pizza and jollof Rice......
INGREDIENTS:
20 Roma tomatoes de seeded
8 Red Bell peppers
5 large Onions
10 cloves of garlic
1 thumb size ginger chopped before blending
1/2 cup of beets blended
1 cup tomato paste
Habanero and scotch bonnet chilies (amount is to taste)
1 bundle of flat leaf, or Italian parsley
1 cup of cooking oil, and extra for roasting vegetables
3 dry bay leaves
1 tsp each fennel seeds, aniseed, rosemary, dry thyme
1 tbsp curry powder
6 green cardamom pods
Salt to taste
1 tsp crushed black pepper to season stew and extra to roast vegetables.
