The holidays are approaching! Don't get me wrong, Christmas cookies and gingerbread men are great, but if you're looking for something new, try these Pistachio Cranberry biscotti! It's a simple and elegant recipe that you can share with friends and family.

Recipe:
• 1 cup sugar
• ½ cup oil
• 3 eggs

• 3 ¼ cup flour
• Salt
• 2 tsp baking powder

• ½ cup whole pistachios
• ½ cup sliced cranberries

• 3 tbsp white chocolate chips
• 1 tbsp vegetable oil

1. Beat wet ingredients together with hand mixer until light yellow and foamy.
2. Whisk dry ingredients in a separate bowl and fold to combine. Fold in pistachios and cranberries.
3. Shape into two flat logs. Bake at 375F for 30 min.
4. Cool and slice into half-inch thick slices, lay flat and continue baking for 8 min per side.
5. Melt white chocolate and vegetable oil over double boiler, whisking gently until smooth. Drizzle over tops of biscotti. Add cranberries to garnish.
