Healthy Cake recipe using Ragi flour:
Ingredients:
Egg-one large
Melted jaggery-3/4 cup
Oil-1/4 cup
Ragi flour-3/4 cup
Wheat flour-1/4 cup
Baking soda-1/4 tsp
Baking powder-1/2 tsp
Cocoa powder-2 tbsp
Preparation:
Pre-heat a heavy bottom pan with tight lid on low flame for 10 minutes. (place a small stand inside).
In a mixing bowl; add one large egg.
Mix it well using a hand mixer for a minute.
Add melted jaggery and oil; mix well.
Place a strainer on top and add all the remaining dry ingredients.
Mix well gently until well combined (do not over mix).
Pour the batter in to a lined 6 inch baking tray.
Place it inside the pre-heated pan and cook on low flame for 35 minutes or until done (insert a skewer and check whether it comes out clean; if not cook few more minutes).
Allow the cake cools down completely before slicing or frosting.
