Hellllooooo everybodyyyyy!!!!!

This episode is alllll bout CHEESECAKES. Mini BASQUE Cheesecake to be exact. This recipe is MUCH less intimidating than the tradish version.
Not to mention they're super fast to make and you can EASILY make them and eat them in the same day. Real Tessa style if I do say so myself.

They're teeny tiny, don't require any fancy equip annnnnd we're intentionally burning and cracking them. The recipe is accompanied by a berry sauce that even uses FROZEN berries. They're perfection and I can't wait for you all to make them.

CHEESECAKES:

Ingredients:
2 packs of room temp, plain cream chzzz
4 room temp eggs
1 1/2 cups heavy cream
1/2 teaspoon salt
1/2 teaspoon vanilla extract
1 cup white granulated sugar
1 1/2 tablespoons all purp flour

Preheat oven to 500 degrees F.
In a large bowl smoosh together cream cheese and sugar until nice and smooth. Add in the heavy cream and whisk until fully combined and no lumps remain. Then add in one egg at a time, making sure to fully incorporate between each addition. Next add the salt and vanilla, mixie mix. Lastly add the flour (ideally by sifting) and mix to combine.

Prepare your 6 7oz ramekins by spraying with oil (or using butter or oil) and smooshing in a piece of 8inch-ish parchment. Place all ramekins on a baking sheet for easy moving. Pour in the batter to about 3/4 of the way up OR until they're all even.

Bake for 20-25 minutes on the center rack, until deeeeeeply browned and intensely puffed up. Turn the oven off, prop it open with a wooden spoon, and let "cool" for another 20 minutes. Then remove from the oven, let them come to room temp, and then place in the fridge for at bareeeee minimum 2 hours, but ideally 3-5 OR overnight.

BERRY SAUCE:

Ingredients:
1 cup berries (I use mixed frozen)
1/4 cup packed light brown sugar
1 tablespoon lemon juice
1/2 teaspoon lemon zest
Pinch of salt

In a small bowl combine berries and sugar, let sit for a couple minutes. Add in lemon zest and lemon juice. Transfer everything to a pot and cook over medium heat for a 3-5 minutes, or until it starts rapidly bubbling. Reduce the heat to low / medium-low and cook for about 10 minutes, allowing the berries to break down further.

Pour through a fine mesh strainer and allow the liquid to strain out. I like to use a spoon to smoosh the berries further and get every last bit of juiceee out.

Assembly:

Unwrap your lil mini chz cakez and spoon over some berry sauceee. That's it baby.
