Aji Negro is a unique spicy umami paste made in the Amazon Jungle by Indigenous people in Ecuador, Peru, and Colombia. It's made from yuca brava, a plant that's high in deadly cyanide. In order to make this poisonous cassava plant safe, it takes over a week. The results are mixed with chilis and fermented. It's one of the most umami ingredients I've ever had.

They sell jars of aji negro that are produced by the Secoya people of Ecuador and Peru, and distributed by Beyond Lagartococha (http://www.beyondlagartococha.com/), a not-for-profit group started by Quito high school students. The proceeds from the sale go towards paying the salary of a teacher in the Secoya community. Beyond Lagartococha also helped build the communities first school.

If you're in Ecuador and you want to take home a unique culinary souvenir, and help an Ecuadorian indigenous community at the same time, aji negro ("black hot sauce" in English) is a great option.
