If you'd like to make either of these in advance, I recommend keeping the sliced cucumbers in a separate container until you are ready to eat it! Due to the salt, the cucumbers will wilt and release a lot of water if they sit too long.

California Roll Salad ( 00:28 )
Ingredients:
1 cucumber, thinly sliced
1 avocado, diced
1 cup imitation crab cut into bite size pieces
1 Tbsp soy sauce
1 Tbsp Kewpie mayo, or regular if you can't find it
1 Tbsp whipped cream cheese
sesame seeds
chili flakes (optional)

Directions:
Combine all ingredients in a bowl or container with a lid. I recommend leaving out the avocado at this point. Either stir to combine or secure the lid and shake until the cucumbers are coated with the dressing. At this point add in the avocado and gently fold it in. This will keep the avocado pieces whole.

Enjoy immediately! This one does not keep very well.

Peanut Sauce Salad ( 5:00 )
Ingredients:
1 cucumber, thinly sliced
1 cup imitation crab, chopped
1 Tbsp soy sauce
1-2 Tbsp peanut butter
1 Tbsp sesame oil
1 minced or grated garlic clove
A drizzle of rice wine vinegar
chili flakes (optional)

Directions:
Combine all ingredients in a bowl or container with a lid. Either stir to combine or secure the lid and shake until the cucumbers are coated with the dressing.
