When I think about the chefs who have shaped the way I cook and see food, Roy Choi is right up there in my Mount Rushmore. He’s not just a pioneer of Korean cuisine in the United States; he’s one of the key voices behind modern fusion cooking, making it approachable, craveable, and deeply rooted in both culture and creativity. Roy introduced the world to a new kind of street food when he launched his Kogi BBQ truck in Los Angeles back in 2008. That truck wasn’t just selling food, it was sharing a movement. Roy’s genius wasn’t just about crossing flavor borders; it was about democratizing food and showing that gourmet-level taste could be accessible to everyone on the street. His inventive mash-up of marinated bulgogi or spicy pork folded into warm corn tortillas set the stage for the nationwide emergence of Korean-Mexican fusion. This recipe for Korean spicy pork tacos is my personal homage to Roy and the profound influence he has had on me.

I took my own authentic spicy pork recipe, filled with gochujang, garlic, and ginger, and served it in a classic street taco with all the toppings we know and love. It’s bold, full of heat, packed with flavor, and straight up fun to eat. Just like the tacos Roy was serving from the side of his truck.
