Add toasted pine nuts for a delicate crunch, and then the colors take over: juicy cherry tomatoes, cool cucumber, and sharp red onion, all tossed with fresh parsley.

Pearl Couscous, Pine Nut and Halloumi Salad
Ingredients:
1 cup pearl couscous (Israeli couscous)
1 1/2 cups water or vegetable broth
200g halloumi cheese, sliced
1/4 cup pine nuts, toasted
1 cup cherry tomatoes, halved
1/2 cucumber, diced
1/4 red onion, thinly sliced
1/4 cup fresh parsley, chopped
2 tablespoons olive oil
1 tablespoon lemon juice
Salt and black pepper, to taste
Directions:
In a saucepan, bring water or broth to a boil. Add pearl couscous, reduce heat, cover, and simmer for 10–12 minutes or until tender. Fluff with a fork and let cool.
Meanwhile, toast pine nuts in a dry skillet over medium heat for 2–3 minutes until golden, then set aside.
In the same skillet, sear halloumi slices for 1–2 minutes per side until golden brown. Remove and slice into bite-sized pieces.
In a large bowl, combine cooked couscous, cherry tomatoes, cucumber, red onion, parsley, pine nuts, and halloumi.
Drizzle with olive oil and lemon juice, season with salt and pepper, and toss gently to combine. Serve warm or chilled.
