Today, I’m excited to share with you a simple and delicious treat — Apple Oatmeal Cookies. These cookies are soft, chewy, and bursting with natural sweetness from fresh apples. They're perfect for a quick snack or an afternoon tea, and the best part? You don’t need a mixer to make them!

Let’s get baking!

Ingredients (for 10-12 cookies):
50g (1/4 cup) granulated sugar
57g (1/4 cup) unsalted butter, softened
1 large egg, at room temperature
1/2 tsp vanilla extract
110g (1 1/4 cups) oat flakes
50g (1/3 cup) all-purpose flour
1 tsp baking powder
1 medium apple, peeled and chopped

Prepare the Dough:

In a large bowl, cream together the softened butter and sugar until light and smooth.
Add the egg and vanilla extract, and mix until well combined.
Stir in the oat flakes.
Add the flour and baking powder to the oat mixture and stir until a thick batter forms.
Fold in the chopped apple evenly.

Bake the Cookies:
Preheat your oven to 350°F (175°C).
Line a baking tray with parchment paper.
Take small portions of dough and shape each cookie by hand, placing them on the tray with a little space between each one.

Bake in the preheated oven for 18–20 minutes, or until the edges are golden.
Let them cool slightly on the tray before transferring to a wire rack.
