The lastest release from Dingle!
Lunasa is the Irish harvest festival, and essentially means the Festival of Lugh, one of the celtic gods. The festival marks the beginning of the harvest period, and in fact the Irish name for August is Lunasa, showing the importance of this harvest period.
In keeping with the spirit of the harvest, rather than going for a wine finish, Dingle have doubled down on the influence of bourbon, with the whiskey being double bourbon matured, having spent the first 3.5 years of its life in bourbon barrels before being recasked into a Widow Jane bourbon barrel for another 3.5 years.
Dingle's normal bourbon barrels are sourced from places like Maker's Mark, Basil Hayden's, or Heaven Hill, but the barrels for this finish were sourced specifically from Widow Jane, a new bourbon distillery in New York, which has won plenty of acclaim for its sourced releases. The barrels sourced by Dingle previously held a Kentucky bourbon with a mashbill of 70% corn, 20% rye and 10% malted barley.
This has really given the whiskey a sweet sugary and creamy note which compliments the classic “Dingle” herbal and fruity character in their malt, making for a very drinkable whiskey, especially coming in at 50.5% ABV or 101 proof.
Tasting Notes:
Nose:
The whiskey really leans into the bourbon character, with plenty of sweet salted caramel and butterscotch, as well as some candied ginger. The nose isn't very youthful, with plenty of the characteristic Dingle malt whiskey coming through without being overpowered.
Palate:
The nice high proof gives the whiskey a lovely amount of weight in the glass, with a really rich palate. Again, plenty of sweetness with caramel, butterscotch and creamy fudge, on top of a touch of oak spice and lemon sherbert.
Finish:
The sweetness lingers nicely, but as it starts to fade, the oak spice stays more prominent with some rich dark cocoa notes which in turn fade off leaving a lasting sweetness.
Ultimately, I think this might be my favourite release of the wheel of the year so far. I know that bourbon on bourbon isn't the most exciting of combinations, but you have to give credit where credit is due. The flavour of the malt really shines through, isn't overpowered, and is done really well.
