Magic Custard Cake

Ingredients
Four eggs, separated
3/4 cup powdered sugar
1 tsp vanilla extract
125g unsalted butter
3/4 cup plain flour
2 cups evaporated milk - lukewarm

Procedures
1. Preheat your own to 160C and lightly grease a cake tin or dish you’re going to cook your cake in.

2. Separate your eggs with four yolks in one bowl and four whites in another.

3. Add the sugar to the egg yolks and beat for about one minute until glossy and pale yellow.

4. Add vanilla extract and butter, beat until incorporated.

5. Pour in the milk. This will make the mixture very loose.

6. Add the flour and beat until combined.

7. Beat the whites in another bowl, until stiff peaks form.

8. Using a spatula or whisk, gently fold in the egg whites. You don’t want to knock the air out of them – a few lumps of egg white left in the mix is fine.

9. Pour everything into the cake tin and put it in the oven. We baked it at 160°C preheated oven for 45 minutes.

NOTES:
The cooking time will vary depending on the temperature of the ingredients and your oven. Some took it 60 to 70 minutes to set the cake. It’s best to check around the 40-minute mark. If the cake jiggles when you shake it, it’s not set. Keep checking every five minutes until it’s cooked.
