What is CHICKEN STEW?
Chicken stew is a stew made with chicken and various vegetables, cooked in a flavorful broth. It's a comforting and versatile dish, with variations found worldwide.

VARIATIONS: Many regional and cultural variations exist, with different spices, vegetables, and thickening agents.

TOOLS & APPLIANCES (used here):
A. Prestige Induction Cooker (purchased from Amazon)

C. Agaro Chef's knife (from Amazon)
D. All other kitchen tools as required (mostly from Amazon)

INGREDIENTS & PREPARATION:
Total Cooking time (1 hour): with 20 Mins. preparation time)

A) Marinating the Chicken : (with ingredients and its quantity)
• 900 gm Whole Chicken: Cut to pieces. Consider Boney pieces which are good for stew. Marinate with Salt to taste, 1 tsp white or black pepper powder, Juice of half lemon. Cover and keep in rest for 1 hour.

B) Prepping the Other Vegetables : (with Quantity)
• 1 Papaya (medium sized): Peel the skin. Remove the inside seeds. Cut to pieces lengthwise.
• 1 Carrot (medium): Peel the skin. Cut to a bit long pieces.
• 4 potatoes (small ) : Peel the skin. Keep whole.
• 1/2 Capsicum (medium) : Cut to pieces lengthwise.
• 8-10 Beans : Cut to a bit long pieces.
• 2 Green Chilies (slitted)
• 4 Onion (small): Peel. Keep whole
• 1 Tomato (medium) : cut to pieces lengthwise.
• 1 Onion (medium): cut to big pieces.
• 7-8 Garlic Cloves (chopped)

C) PROCESS of Cooking STEW : (with Ingredients & its quantity)
1. Heat a Kadai. Pour 1 tbsp refined oil & 25 gm Butter.
2. Add 2-3 pieces Cinnamon Sticks, 3 crushed Green Cardamom, 10-12 Whole Black Pepper Seeds, 2 Bay Leaves, 1 tbsp Chopped Ginger. Stir well.
3. Add chopped Garlic & Onion Pieces. Saute a little.
4. Add marinated chicken. Stir intermittently in medium flame till the colour of chicken changes.
5. Add hard vegetables at first like papaya, potatoes and onions. Cover in medium flame till the chicken releases water.
6. Then, add Carrot and Green chili. Cover for 4 mins in medium heat.
7. Add tomato pieces in low flame. Stir intermittently.
8. Add Salt to taste. Cover for 2 mins in medium flame.
9. Now keep the flame high to allow the water coming out of the process, to evaporate quickly.
10. Pour 4 cups Hot Water. Add Beans and Capsicum pieces. Cover in medium-low flame till all the vegetables and chicken pieces are well boiled. 11. Add the cornflour slurry (mixture of 1 tsp Cornflour and a little water) to bring the consistency of the soup as required. Cook for 3 minutes.
12. Add 1 tsp white pepper powder. Cooking is complete.

FINAL STEP:
Shift to a serving bowl. Serve hot with Steamed Rice/Rooti/Crunchy Bread Pieces or stick.

For making a healthy chicken stew:
a) Choose lean chicken
b) Load up on vegetables.
c) Use olive oil or other healthy oil for cooking.
d) Take care about quantity of salt.
