Carne de sol or “sun meat” refers to this traditional method of preserving meat by using salt to draw out the moisture from the meat and the sun to dry and cure it. The meat can then be grilled as a steak, prepared for sandwiches or baked.

Our video displays a much quicker version of this technique that you can do at home.

This method of preserving meat is believed to have been started by the people who live in the dry countryside of Brazil, called the “sertanejos”. Today, meat is cured in this fashion all over the country and used for dishes in many different ways.
