Welcome to Simply Cooking With Shawn! In today’s video I will be making a moist southern cornbread from scratch.

Recipe

2 cups self rising flour
1 cup self rising cornmeal
1/3 cup sugar (Optional)
3/4 cup vegetable or canola oil
1/4 cup buttermilk
3/4 cup milk
3 eggs
1 stick margarine
2 sticks salted or unsalted butter

Preheat oven to 400 degrees. Open and place buttter and margarine in a 13 x 9 or 10 x 8 baking dish or similar size and place in oven to melt. In a separate bowl crack eggs and whisk with fork and set aside. In a large bowl add flour, cornmeal and sugar and whisk together. Add eggs, milk, buttermilk and oil and mix until well incorporated. Note: batter will be thick until you add butter and margarine. Remove pan from oven and pour in margarine and butter and whisk into batter until well incorporated. Once mixed, pour batter into the same dish the margarine and butter was melted in, spread evenly and place pan in oven and bake for 25 - 30 minutes, checking on it at the 20 minute mark. Remove from oven, center should be firm. To ensure doneness insert a fork or toothpick, into the cracks. If it comes out clean the cornbread is ready to serve.

This recipe pairs well with soup, chili, collard greens etc., or a great addition to any weekday meal.
