Concord Grape Pie has been a family tradition for me, one of the best ways to celebrate the harvest of Concord grapes my parents grew in our backyard. It’s one of my all-time favorite pies, filled with nostalgia and memories of my mother also making homemade grape juice. The deep, sweet flavor of the grapes creates a filling that’s truly one-of-a-kind. While making this pie may take a little extra care—slipping the skins off the grapes and removing the seeds—it’s worth every step for that perfect bite.

Concord Grape Pie Recipe:

Ingredients:
- 4 cups deseeded Concord grapes with skins
- 1 ⅓ cups sugar
- ¼ tsp salt
- 4 tbsp cornstarch
- 1 egg (beaten, for egg wash)
- Turbinado sugar (optional, for sprinkling)

Instructions:
1. Slip the skins off the grapes and set the skins aside. Place the seeds and pulp into a food mill. Run the mill to separate the seeds, keeping only the pulp. Combine the grape pulp with the skins.

2. In a large bowl, mix the grape pulp and skins with sugar, salt, and cornstarch until well combined.

3. Roll out one pie crust and place it in a 9-inch deep dish pie pan. Pour the grape filling into the crust.

4. Roll out the second pie crust and place it over the filling. Crimp the edges to seal, and cut 3 slits in the top crust for steam to escape. Brush the entire top with the beaten egg, and sprinkle with turbinado sugar for extra texture and shine.

5. Place the pie on a cookie sheet (to catch any potential spillover) and bake at 350°F for 1 hour to 1 hour and 20 minutes, or until the crust is golden brown and the filling no longer looks runny when gently shaken.

6. Cool Completely - This is key! Let the pie cool completely before slicing to ensure clean, neat cuts and a set filling.
