Ingredients
1/3 cup honey
1/4 cup soy sauce (use reduced sodium if preferred)
2 garlic cloves, minced (or 1 teaspoon jarred minced garlic)
Optional: 1 teaspoon minced fresh ginger
1 lb medium uncooked shrimp, peeled & deveined
2 teaspoons olive oil
Optional: chopped green onion for garnish


Instructions:
1.Whisk honey, soy sauce, garlic, and ginger (if using) in a medium bowl. Set aside half for cooking and use the rest to marinate the shrimp.
2.Place shrimp in a sealable container or bag, pour half the marinade over, and refrigerate for 15 minutes (or up to 8-12 hours).
3.Heat olive oil in a skillet over medium-high heat. Add shrimp and cook for about 45 seconds on one side until pink. Flip the shrimp, add the remaining marinade, and cook for 1-2 more minutes until fully cooked.
4.Serve with extra sauce and garnish with green onion. Great with brown rice and steamed veggies.
