soba noodle salad:
1 serving of cooked and cooled soba noodles
3 tbsp of the spicy peanut dressing (thinned out with water, if you like)
1 cucumber, sliced
1/2 cup edamame beans
1/2 cup cooked plant based crumbles
garnish with chili crisp, cilantro, green onions, black and white sesame seeds

crispy caesar tofu and kale salad:
1 block of super firm tofu (freeze, thaw, and then gently squeeze the water out)
1/3 cup coconut aminos or soy sauce
1 cup caesar dressing
1 cup panko breadcrumbs
3 tbsp corn starch
2 tbsp nutritional yeast
2 tbsp garlic powder
1/2 tsp salt
1/4 tsp black pepper

crispy tofu cooking methods:
airfryer: generously spray each tofu slice with oil and cook in the air fryer on 400 degrees for 20-25 minutes, or until golden

pan fry: add 1/2 inch of oil to a large cast iron skillet. Once hot (do not add until the oil it ready or the tofu will soak up the oil), add the tofu and cook on both sides for 2-3 minutes or until golden

bake: preheat the oven to 400 degrees. Generously spray the tofu with oil and add to a baking sheet. Bake in the oven for 40 minutes, or until golden, flipping halfway through

BBQ Chickpea and rach tacos:
1 can of Chickpeas, drained and rinsed
1/2 cup of vegetable broth
1/4 cup of BBQ sauce
1 tbsp of olive oil
Salt, pepper, and garlic powder
Remaining taco ingredients: corn tortillas, butter lettuce, hemp seed ranch dressing, diced red onions, cilantro, more bbq sauce
