Ingredients:

• 1 cup basmati rice
1 lb beef or mutton pieces
2 cups yakhni (meat stock)
• 2 tbsp ghee or oil
1 onion, chopped
• 2 cloves garlic, minced
1 inch ginger, grated
• 1 tsp cumin seeds
1 tsp coriander seeds
• 1 tsp fennel seeds
1 tsp turmeric powder
1 tsp red chili powder
• Salt, to taste
2 tbsp chopped fresh cilantro
(optional)

Instructions:

1. Rinse rice and soak for 30 minutes.
Drain and set aside.
2. In a pot, heat ghee or oil over medium
heat. Add onion, garlic, and ginger.

3. Add beef or mutton pieces and cook
until browned.
4. Add yakhni, cumin seeds, coriander
seeds, fennel seeds, turmeric powder,
red chili powder, and salt. Bring to a
boil.
5. Drain rice and add to the pot. Stir
gently.
6. Reduce heat to low, cover, and simmer
for 15-20 minutes or until rice is
cooked and fluffy.
7. Garnish with cilantro, if desired.
8. Serve hot.
Note: Yakhni is a meat stock made by
simmering meat (usually beef or mutton)
o in water with spices. You can use
store-bought yakhni or make your own by
simmering meat in water with spices like
cumin, coriander, fennel, and turmeric.
