I made a few changes - 1. I rinsed the seeds twice and let them hang out a second day in water and rinshed twice after the second day which really cut down on the bitterness and vegetal flavors. 2. I let the seeds hang out in the vodka for 2 weeks - tasting every few days revealed a greater depth of maple flavor. 3. For me it didn't have enough maple flavor so I added 1 tablespoon of pure vanilla extract and then another - finally the tincture had enough maple flavor to add to the beer.
