Stuffed Squash In Tomato Sauce Kousa Mehshi Bil Banadoora

Kousa is a Middle Eastern dish made with an aromatic spiced beef, rice and onion mixture (stuffing), which is then stuffed into the squash and cooked in a delicious garlic and mint-flavored sauce!

Ingredients:

13 Medium Sized Mexican Calabacita Squash(Kousa)
Stuffing Ingredients:
1 lb Ground Beef
1 1/2 Cups of Rice
1 Small Onion Chopped
1 Tablespoons Salt
1 Tablespoons Pepper
2 Tablespoons Cinnamon
2 Tablespoons 7 Spice (or Allspice)
2 Tablespoons First Street Steak Rub (optional)
1 Tablespoons of Olive Oil (optional)

Tomato Sauce:
4 Cups Tomato sauce (with chunks)
4 to 5 Cloves of garlic minced
2 Tablespoons Lemon juice
1 Stick of Butter
2 Tablespoons Dry Mint Leaves

Instructions:
Cut off the stalks of the squash and the dry ends without removing too much of the squash
Carefully core the squash without puncturing the outside of the squash.
Then wash and rinse the squash and set aside.
Mix all the ingredients for the stuffing.
Start filling the hollowed squash with the stuffing, until about 1/4 inch of empty space at the top since the rice will expand when cooking.
Transfer the stuffed squash into a deep pot that will fit all of them. Pour the tomato sauce over the squash, add the garlic, lemon juice, butter, and dried mint. Cover and cook rapidly until the sauce boils, then lower heat and simmer for about 45 mins, until the stuffing and squash fully cook.
Serve the squash onto a plate, slice in half then pour the sauce over top.ENJOY!!
