Hey Y'all! It's corn! I'll tell you all about it!

Today I made some street corn or Mexican style creamed corn, whatever you want to call it! Yesterday, my husband cooked a pork butt on the Traeger (YUM) and this creamy corn recipe went perfectly with the pulled pork. I think this would go well with any barbecued meat such as ribs, brisket, fish tacos, shrimp tacos, and it serves as a dip as well. I know my measurements weren't perfect in the video but the ingredients listed below should work out well for you! This is an extremely easy dish to prepare and that's why I love it so much. Okay... Maybe the cream cheese and heavy cream is why I love it so much who knows :) Feel free to adjust the ingredients to your liking!

Ingredients
3 cups frozen corn kernels
1 - 8 oz block of cream cheese
1/2 cup heavy cream or half and half (depending how rich you want it)
1/2 stick of butter
2-3 slices bacon, cut into pieces
2 tbs pickled jalapeños, diced
1/4 heaping cup of diced tomato, canned or fresh , whatever you have
1/2 tsp chili powder
1/4 tsp cumin
salt to taste
