This is the kind of bread I can make again and again and never get bored of it. Crispy, golden crust, light, airy crumb. That deep flavor from whole wheat flour. It's simple to make, with no kneading required, and the technique is super satisfying. If you’ve been searching for a new go-to bread recipe, this is the one.

Ingredients:

Water - 1 cup (230 ml)
Fresh yeast - ¾ tsp. (3 g) or dry yeast - ½ tsp. (2 g)
Bread flour - 1 ½ cups (220g)
Whole wheat flour - ¾ cup (100g)
Salt - 1 tsp. (6 g)

Tools I Used:

Baking pan I used to bake this bread: https://amzn.to/3OZQQT3 (I used two of them, one turned upside down and used as cover)

Alternative pan:

Instructions:

Mix water, yeast, flours, and salt until combined—no kneading needed. Let the dough rest for 30 minutes.
Stretch the 4 sides of the dough, fold to the center, and use my "lift and slap" method to build strength. Rest for another 30 minutes.
Repeat the folds one more time, then let the dough rise until doubled in size (about 2 hours).
Divide into six equal parts, shape into balls, and let them rest before the final shaping.
Flatten gently, roll, seal, and place on a tray. Let rise again for 30 minutes.
Dust with flour, smooth it out, and score the tops. Sprinkle a few drops of water around the bread.
Cover with a second tray and bake at 430°F (220°C) for 20 minutes to trap steam.
Remove the top tray and bake for 10 more minutes.
Most important step: enjoy that crackly crust and soft, airy center!

The whole wheat flour adds depth, the crust sings as it cools, and the inside stays tender and airy. Just add butter, and you've got pure perfection!
