Important to remember
If you can't access a legendary animal or fish after hunting it (it is in too deep of water, it sinks, is somehow out of bounds, etc) the carcass will be considered abandoned, and after a short time the pelt & materials will be automatically transferred to the trader & fence. Sometimes this can take a short time in-game before the notification pops up.

Legendary pelts are always perfect quality so it doesn't matter how many times you shoot it, or what type of weapon/ammo you use.

If a location is too busy for the animal to spawn, you will get a notification. Camp nearby, and try again in a couple hours.
