How to Make Amazing, Great Tasting Peach Cobbler that is Gluten Free and Dairy Free!

Shopping List:

5 (freestone) ripe peaches, sliced
Raw sugar (1/4 cup)
Coconut sugar (1/4 cup for peaches plus 1/2 cup for batter)
Lemon juice (1 Tbsp)
Ground Oat flour (1 cup)
Fine Almond flour (1 cup)
Cornstarch (1 Tbsp)
Egg (1)
Non dairy margarine (1/4 cup melted)
1 tsp vanilla
Full Fat coconut milk (1 cup, canned)
1/4 tsp salt
1/2 tsp cinnamon
2 tsp baking powder

Instructions for peaches
Place sliced peaches in a 3 quart saucepan
Add 1/4 cup raw sugar, 1/4 cup coconut sugar, and 1 Tbsp lemon juice
Cook 2-3 minutes and add 1 Tbsp cornstarch. Cook until just starting to thickened and remove from heat, set aside

Instructions for batter
In mixing bowl add 1 egg, 1/2 cup coconut sugar and 1/4 cup melted dairy free margarine, mix well
In separate bowl add dry ingredients;
1 cup ground oat flour
1 cup fine almond flour
1/4 tsp salt
1/2 tsp cinnamon
2 tsp baking powder
Give it a good mix and add to wet ingredients, mix well and spread into a greased 12''x7'' baking dish
Spoon peaches on top of batter, leaving some of the batter to show through
Bake in a 350 degree oven for 45-50 minutes

Allow to cool (or don't, I love it hot!)
