All three recipes are very similar to each other but a closer look will tell you that the small changes can make a huge difference in the final dish. This episode aims to solve the problem of decision fatigue and paradox of choices. I make and taste all three pink sauce pasta recipes from Chef Ranveer Brar, Chef Sanjyot Keer and Chef Pankaj Bhadouria.

Pink Sauce Pasta Ranveer Brar –
Red sauce is very desi tasting. Not too spicy but very well balanced in flavor.
Cream in red sauce does not make the best pink sauce.
Pasta is cooked perfectly for Indian pasta.
Veggies need to be stir fried and seasoned.

Pink Sauce Pasta YFL Your Food Lab-
Pasta cooked al dente not suitable for Indian taste buds.
Red sauce lacks desi flavor.
White sauce is amazing.
Adding cheese to red sauce gives a bad texture.
Pink sauce made by mixing red sauce plus white sauce is tastier.

Pink Sauce Pasta Pankaj Bhadouria-
Red sauce consistency is the best.
Red sauce is more authentic Italian.
White sauce is smoother due to cheese slices.
Pink sauce is too rich and bland.
Blanching and deseeding the tomatoes works in some cases not in all.

The best sauces-
Red sauce- Chef Ranveer Brar
White sauce – Both YFL and Chef Pankaj. Chef Sanjyot’s white sauce added nutmeg that was amazing. Chef Pankaj used cheese slice which gave smoother richer white sauce.
Pink Sauce- Chef Sanjyot white plus red one.

My perfect pink sauce pasta would be-
Boil the pasta for 9 mins.
Make red sauce according to Chef Ranveer’s recipe but blitz it like Chef Pankaj told.
Make white sauce according to Chef Sanjyot’s recipe but use cheese slices like Pankaj did.
Make pink sauce by mixing red and white sauces mentioned above.
