INGREDIENTS
Whole Chicken, spatchcocked
Whole Lamb rack w/ fat cap on
Lettuce
Tomato
Dill Pickle
White Cabbage
Frozen French Fries
Olive Oil
Flatbread

MEAT SPICE MIX INGREDIENTS
Paprika
Ground Coriander
Allspice
Garlic Powder
Onion Powder
Cumin
Fennel Seed
Oregano
Isot pepper/urfa biber
Salt
White Pepper
Pepper

WHITE SAUCE INGREDIENTS
150g Greek yogurt or Sour Cream
3 Tbsp mayonnaise
2 Garlic cloves
½ lemons juice
1 Tbsp olive oil
Salt

DONER RED SAUCE INGREDIENTS
4 Hungarian yellow pepper
1 onion
Tomato Paste
Apple Cider Vinegar
Sugar
Salt
Paprika
Pepper
Garlic cloves
Turmeric
Lemon juice
Olive Oil

COOKING METHOD:
1. Start by spatchcocking the chicken. Cut down the spine, through the breastplate, and remove rib meats. Place on a rimmed baking sheet.
2. For the paste, combine garlic powder, oil, onion powder, cardamom, ground cloves, paprika, and Urfa Biber pepper, and mix until combined.
3. Season the chicken with salt then fully coat the chicken in the spice mixture. Place in a 375-degree oven. Remove chicken from the oven and let rest for 10-minutes.
4. Add lamb to a baking rack in a rimmed baking dish. Drizzle with oil and sprinkle with whole fennel seeds, white pepper, cumin, salt, and pepper. Roast in a 375-degree oven and let rest until well done.
5. Chop, slice, and dice the parsley tomato, red onion, Hungarian peppers, pickled jalapenos, and white cabbage.
6. Remove chicken and lamb meat from the bones and chop it into bite-size pieces. Mix together in a bowl.
7. Heat oil to 360 degrees and fry the frozen fries are golden brown. Add to a bowl and season heavily with salt.
8. Steam the flatbread before topping it with the mixed meats, onions, and parsley mix, tomatoes, cabbage, pickled jalapenos, fries, garlic sauce, and doner red sauce, and wrap/fold together.

RED DONER SAUCE METHOD:
1. Heat olive oil in a large pan until hot. Add in sliced onions and fry until a little color develops.
2. Add in sliced peppers and mix to combine. Cook for 2 minutes then add chopped garlic.
3. Add and stir in ½ cup sugar then add ½ cup apple cider vinegar, lemon juice, turmeric, paprika, and tomato paste. Mix until thoroughly combined.
4. Add to a blender and blend until smooth. Add fresh cracked pepper and lemon juice to taste.
5. Pour into a bowl to cool. Once cool, add to a squirt bottle and refrigerate until ready to use.

GARLIC SAUCE METHOD:
1. In a large mixing bowl, add yogurt (or sour cream), mayonnaise, and juice of a lemon then mix together.
2. Add in grated garlic cloves and salt then mix together.
3. Add to a squirt bottle and refrigerate until ready to use.
