Ingredients

For Boiling Soya Chunks:

60g soya chunks
Salt
Water (to boil)
For Marination:

2 tbsp thick curd (dahi)
2 tbsp gram flour (besan)
1 tbsp ginger-garlic paste
1 tsp salt
1 tsp Kashmiri red chilli powder
¼ tsp turmeric powder
¼ tsp garam masala
1 tsp roasted cumin powder

1/2 tsp Black Pepper Powder
1/2 tsp Chaat Masala

Crushed kasuri methi (dried fenugreek leaves)
For Masala Gravy:

2–3 tbsp oil
1 tsp cumin seeds
3 finely chopped onions
1 tsp salt
1 tsp Kashmiri red chilli powder
1 tsp coriander powder
3 pureed tomatoes
2 tbsp whisked curd
Water (as needed for gravy consistency)
Additional kasuri methi, fresh coriander, green chilies for garnish
For the Raita:

Curd (well whisked)
Finely chopped onion
Tomato
Cucumber
Green chilies
Fresh coriander
Raita masala (optional)


Process

Boil the Soya Chunks:
Boil water in a pot, add salt and soya chunks. Cook until soft.
Rinse 2–3 times in clean water to remove odor, then squeeze out excess water and keep aside.
Prepare the Marinade:
In a bowl, mix curd, gram flour, ginger-garlic paste, and all dry spices.
Add soya chunks, mix well with hands, and let it marinate for at least 15–20 mins.
Cook the Masala Gravy:
Heat oil in a pan, add cumin seeds. Once they splutter, add chopped onions.
Sauté until golden brown. Add salt, red chilli powder, coriander powder and stir.
Add pureed tomatoes and cook covered for 5–7 minutes until soft.
Stir in whisked curd gently to avoid curdling, and bring to a boil.
Add marinated soya chunks, mix well, and pour in hot water to adjust the gravy consistency.
Cover and cook for another 5–7 mins. Finish with kasuri methi, coriander, and green chilies.
Make Raita:
Whisk curd until smooth. Add chopped onion, tomato, cucumber, green chili, coriander, and optional raita masala. Mix well.
Serving Suggestion
