1. We started with pre-smoking a block of cream cheese at 200° for about an hour and a half.

2. In a bowl we mixed 3 cups of whole milk, 2 cups of heavy whipping cream, our smoked cream cheese, and half a stick of butter.

3. After that was all mixed up we got an aluminum foil pan out and added one pound of macaroni noodles (uncooked), our milk, heavy whipping cream, cream cheese and butter.

4. We then shredded 1 cup of gruyere cheese, 1 cup of gouda, and 1 cup of sharp white cheddar cheese.

5. Once our cheese was shredded, we added it to our foil pan and gave it a stir.

6. We went on the smoker at 275° and gave our macaroni a stir every 30 minutes.

7. After an hour and 45 minutes, our macaroni was fully cooked, and we topped it with a little more cheese and let that melt for another 15 minutes.

8. Once our cheese was melted we took it off the grill and served it up. The total cook time was right around 2 hours.
