Gujiya is one of those integral holy recipes, without which the festival seems incomplete. But the traditional gujiya or karanji has an encasing of Maida which is stuffed to with dry fruits and mava and is sweet in taste.
But today I am going to share with you the recipe of Dahi ki Gujiya.
Dahi gujiya is very similar to your Dahi wada or Dahi Bhalla.
It is made with white urad Dal and is served topped with sweetened yogurt, sweet chutney and green chutney.
But the essential difference lies of dahi gujiya chaat lies in its shape, which is very much that like a Gujiya. Dahi gujiya chat also has an interesting stuffing, just like the sweet Gujiya.
Dahiya is stuffed with a lot of dry fruits, nuts, freshly grated coconut, coriander leaves, chopped ginger and green chillies too.

Recipe : Dahi Gujiya
Preparation time: 20 minutes + Soaking time
Cooking time: 20 minutes
Serves: 6-7

Ingredients:
1 ½ cup white urad dal
To serve :
500g yoghurt + more as required
1 tsp salt
4 tsp sugar
Green chutney
Sweet tamarind chutney
Chat masala
Pomegranate seeds
Oil to fry
Stuffing:
½ cup grated fresh coconut
2 tbsp chopped coriander leaves
2 tbsp chopped ginger
2 tbsp chopped green chilies
2 tbsp raisins
2 tbsp chironji
2 tbsp chopped cashew

Method:
Watch the Urad Dal well and soak it for 7 to 8 hours.
Mixed together all the ingredients for the stuffing and keep aside.
Drain the water and grind the Dal with a little water to make a smooth paste.
Whisk the Dal well with the help of an electric whisk or balloon whisk, or with your hands. Still, it is light and fluffy and pale in colour.
Heat 2” oil in a pan to medium hot.
Take a lemon sized portion of the beaten Dal on a wet cloth. Spread it out to a circle of 3 inch diameter. Place a tablespoon of the stuffing in the center. Fold over the Dal. In the shape of a gujiya, with the help of the wet cloth.
Take the shaped gujiya on wet hands and drop it in medium hot oil. Allow the Goodyear to turn golden one side, then flip and turn golden on the other side too.
If you using gujiya, immediately remove the fried gujiya to a bowl of water.
If you want to store the fried gujiya for a long time, remove it on a plate and once it cools down, Storage dinner in airtight container in the refrigerator.
Allow the Gujjar to soak in water for at least 30 minutes. Then squeeze out the water lightly and remove it on a plate. Cover with sweetened yogurt chutneys of choice. Chat masala, chopped coriander and pomegranate seeds and serve.
