🔑 Pro Tips for Methi Lauki Sabzi
1. Taste lauki before cooking; if bitter, do not use.
2. Keep lauki cubes soaked in water to prevent discoloration.
3. Methi leaves add earthy flavor; add a pinch of jaggery if you want to cut bitterness.
4. Use medium flame for sautéing and medium–low while cooking the sabzi.
5. Always cook masala till oil separates for richer taste.
6. For dry sabzi (with rotis), cook uncovered at the end; for light gravy (with rice), add a little extra water.
7. Keep green chillies whole/slit for mild heat, chopped for spiciness.
8. Best served with phulkas, chapatis, or steamed rice with dal.
Ingredients :
300 gms Bottle Gourd (Lauki) - skin peeled and soaked in water
2 to 3 tbsp Cooking Oil (use as per your diet restrictions)
1 tsp Mustard Oil (rai)
½ tsp Cumin Seeds (jeera)
1 tsp Split Bengal Gram (chana dal)
1 sprig Curry Leaves (hand crushed)
1 tsp (5 gms) Ginger (crushed)
1 heaped tbsp (12 to 15 gms) Garlic (crushed)
1 medium (75 gms) Onion (finely chopped)
½ cup tightly packed (25 gms) Fresh Fenugreek Leaves (methi leaves) - washed well & chopped
½ tsp Turmeric Powder (haldi powder)
1 tsp Kashmiri Chilli Powder
1 tsp Coriander Powder (dhania powder)
1 tsp Garam Masala Powder
30 gms Tomato (finely chopped)
½ tsp Salt (as per taste)
100 ml Water (to prevent the spices from burning)
2 to 3 Green Chillies (slightly slitted or whole as per your spice tolerance)
½ tsp Dry Mango Powder (amchur powder)
2 to 3 tbsp Coriander Leaves (chopped)
Note : tsp is teaspoon
