Eggplant has antioxidants like vitamins A and C, which help protect your cells against damage. Many of us are most familiar with eggplants that are large and dark purple, but the shape, size, and color can vary from small and oblong to long and thin and from shades of purple to white or green. Brinjal may help to lower the risk of many heart diseases such as heart attack and stroke by apparently reducing the damage caused by free radicals. It may help with blood circulation in the heart due to its essential components such as bioactive compounds, potassium, fiber and vitamin B6. Brinjal contains different vital minerals such as copper, manganese, potassium and magnesium that might help with bone health.

INGREDIENTS :-
EGGPLANT (बैगन छोटे ):- 300GM
FOR STUFFING :-
CUMIN SEED (जीरा ):- 1 TBSP
MUSTARD SEED (राइ ):- 1 TBSP
FENNEL SEED (सौफ ):- 1 TBSP
BLACK PEPPER (काली मिर्च साबुत ):- 1/2 TSP

FOR GRAVY :-
CHOPPED ONION (बारीख कटी प्याज ):- 1
GREEN CHILLY (हरी मिर्च ):- 1
TOMATO PUREE (टमाटर की प्यूरी ):- 1
GRATED GARLIC (कदूकस किया लहसुन ):-2
DRY MASALA :-
SALT (नमक ):- 1/2 TSP
TURMERIC POWDER (हल्दी पाउडर ):- 1/2 TSP
CORIANDER POWDER (धनिया पाउडर ):- 1 TSP
DEGI MIRCH POWDER (देगी मिर्च पाउडर):- 1 TBSP
DRY MANGO POWDER (आमचूर पाउडर ):- 1/2 TSP
GARAM MASALA (गरम मसाला ):- 1/2 TSP
