I love this cowboy stew because I work long hours and I can make this all in one pot and I can freeze portions in an air tight container and use it through the week or later in the month so that works for me. Ingredients
• 1 lb ground beef
• 1 packages kielbasa sausage, sliced into 1/2 inch pieces
• 3 garlic cloves, minced
• 1 onion, chopped
• 1 (14.5-ounce) cans of peeled and diced tomatoes, drained
• 2 medium baking potatoes, peeled and cubed
• 1 (10oz) cans of pinto beans, drained & rinsed
• 1 (15.2oz) can whole kernel corn, drained
• 2 (10.2oz) cans diced tomatoes with green chili pepper, with liquid
• 1 (10-ounce) package frozen mixed vegetables
• 2 cups chicken broth (or beef broth)
• 1 cup of water
• 1 teaspoons ground cumin
• 1 teaspoons chili powder
• 1 tsp salt and pepper, adjust to taste
