THAI PUMPKIN SOUP (VEGAN): This recipe is vegan, super easy to make and uses ingredients you can store in your pantry for ages for those who can't get out of the house right now! This nutritious, delicious soup recipe is my favourite and roasting the pumpkin and onions beforehand amplifies the flavour in this soup so much you won’t need to add stock. For this recipe, you'll need vegan fish sauce which can be found at Asian supermarkets. Be sure to check the label on your red curry paste, too, to make sure it's vegan as well as some brands can include seafood.
