Recipe:
1 Tbsp Olive Oil
1/2 med Onion (diced)
1 1/2 - 2 Tbsp Garlic (minced)
1 15oz can Petite Diced Tomatoes
1 15oz can Black Eyed Peas (drained & rinsed)
4 cups cubed Red Potatoes
4 cups chopped Collard Greens (2 bunches)
1 cooked Smoked Turkey Leg ( shredded)
6 cups Broth

Seasonings:
2 tsp Smoked Paprika
2 tsp Garlic Powder
2 tsp Onion Powder
2 tsp Chicken Bouillon
1/2 tsp dried Thyme
2 Bay Leaves
1 tsp Oregano
Lawrys Seasoning (to taste)
Salt & Pepper (to taste)
