All you need is potatoes, some minced meat, cheese, and everyday seasonings — and you get a crispy, cheesy, beef-filled roll that looks like a gourmet Wellington but costs almost nothing to make.

Ingredients
Potato Layer
• 3 large potatoes (≈ 1 kg), peeled
• 2 tbsp olive oil
• 1 tsp salt
• ½ tsp black pepper
• 150 g grated mozzarella
Beef Stuffing
• 350-400g minced beef
• 1 onion, finely chopped
• 2 garlic cloves, minced
• 2 tbsp tomato sauce or passata
• 1 tbsp Worcestershire sauce
• 1 tsp paprika
• 1 tsp curry powder
• ½ tsp black pepper
• ½ tsp salt (to taste)
• 1 tsp dried Thyme
• ½ tsp chili flakes (optional for heat)
• 6 coriander sprigs OR parsley, chopped
• 100 g grated mozzarella
• Sprinkle of cheddar (optional)
Preheat the oven to 200°C / 390°F.
Bake the potato base for 25–30 minutes.
Return to the oven at 200°C / 390°F for 15–20 minutes until the outside is crispy.
