Trev trained to be a butcher while serving at HMP East Sutton Park, a women’s open prison in Kent.

It was the charity, Food Behind Bars, who ran the butchery course and helped find Trev a job at The Ginger Pig in Borough Market. Founded by Lucy Vincent, they provide food education in prisons.

We spoke with Trev about her time inside, and how much the butchery course helped her get through life in prison.

In response to Trev’s comments about being at HMP East Sutton Park, a prison service spokesperson said: “While we weren't provided any information to be able to verify these claims, we take allegations of discrimination seriously.”

They also told us their Race Disparity Unit is set to introduce an action plan to better tackle racial discrimination across the organisation.
