Aloo gobhi, aloo gobi, aalu gobhi, gobi aloo or alu gobhi is a vegetarian dish from the Indian subcontinent made with potatoes (aloo), cauliflower (gobhi), and Indian spices. It is popular in Indian cuisine. It is yellowish in color due to the use of turmeric, and occasionally contains black cumin and curry leaves. Other common ingredients include garlic, ginger, onion, coriander leaves, tomato, and cumin. There are a number of variations and similar dishes. Aloo gobhi also known as cauliflower masala, cauliflower potato curry, aloo phool gobhi ki sabji, aalu gobi ki sabzi, phool gobhi aloo curry, gobi masala, restaurant style aloo gobi, dhaba style aloo gobi.
--Ingredients for aloo gobhi.
Cauliflower (phool gobhi) 400g
Potato (aloo) 200g
Onion (payz) 1 cup
Tomato (tamatar) ½ cup
Green chillies 5
Crushed ginger garlic 1½ tbsp
Oil 2 tbsp
Mustard seeds 1 tsp
Cumin seeds 1 tsp
Fenugreek seeds ¼ tsp
Turmeric powder ½ tsp
Red chilli powder 1 tsp
Coriander powder 3 tsp
Kashmir chilli powder 1 tbsp
Salt 1 tbsp
Water ½ to 1 cup
Coriander leaves
--Instructions for preparing aloo gobhi, aluu gobi.
Clean and wash all vegetables.
And cut them and keep aside.
Take a pan, add oil. Once the oil is hot, add mustard seeds, cumin seeds, fenugreek seeds,
green chillies.
Once it crackles, add minced onion, tomato and saute well.
Once its translucent, add turmeric powder, red chilli powder, coriander powder, Kashmir chilli powder, salt and cook until the rawness disappear.
Add potatoes, cauliflower and mix well and cover with the lid and cook for 4 minutes.
Open the lid and add water and cover with
lid again and cook for another 7 minutes on a medium flame.
Add coriander leaves and serve delicious and yummy aloo gobhi with rice, roti, chapathi.
